The success story of Dunnet Bay Distillery goes way back to when Founders Martin and Claire were together at university and dreamed of returning to Caithness and combining their talents and skills in hospitality and tourism and chemical engineering to open a business. Their dream was realised in 2014 and thanks to years of hard work, passion and innovation, Dunnet Bay Distillery is not only a world-renowned award-winning tourist destination that creates top-quality spirits, but provides tourism and employment opportunities for the community of Caithness.
The spirit of innovation led them to become the first UK distillery to create a full season of gins using seasonal botanicals from the seasons.
It began when Hanna, the research distiller found coltsfoot in the distillery garden and the team loved the smell of it, so, being distillers, they distilled it and guess what? It tasted great. This gave Martin inspiration to showcase seasonal botanicals in 4 special editions of Rock Rose Gin. All the seasonal botanicals are grown at the distillery or sourced locally and each gin takes you to a different part of the gin flavour wheel.
Claire worked with the team of designers to give the iconic Rock Rose bottles a seasonal makeover. Spring is, of course, green and the colours on the bottle are inspired by the cherry blossom in Martin and Claire’s garden, reflecting the fresh excitement of coming spring!
On the nose: Clean and fresh to nose with hints of lime.
On the palate: Wonderfully herbaceous with real citrus and juniper notes coming to the fore.
Finish: This gin finishes with cooling and fresh notes.
Recommended serve: 25 ml of Spring Edition Gin, 50 ml of a premium tonic. Garnish with some fresh coriander!
