Crossbill opens new Glasgow Distillery

Crossbill Gin recently relocated to the Barras Art and Design Centre in Glasgow’s east end from a small place in Avemoire.

Owner and distiller Jonathan Engles started creating Crossbill in 2014, made from freshly picked juniper from the Cairngorms, and rosehip.

“I wanted to make something 100 per cent Scottish. I’m from the north east and I thought it would be good to reestablish getting juniper from the Cairngorms.

“It took three years to develop the first batch properly. It all depends on when the juniper and fresh rosehip are in season, I go out and pick juniper from September.

“The key is to start with a good base spirit, 40 per cent of the gin is the spirit the botanicals make up only a small part.”

You can make your own gin with Crossbill at their east end hatchery twice a month – every Saturday and Wednesday night.
